- Branch of rosemary
- 2 green Kyo Savoy mangoes
- 1 tsp sugar
- Pinch of salt
- Hot pepper of your choice
Cut mangoes into spears.
Place rosemary, salt, hot pepper, and sugar in a jar.
Add green mango spears, packed as tightly as possible.
Fill jar with vinegar to brim and close the lid.
Let stand for a couple weeks to allow pickling process to occur.
*For vinegar, we used a 50/50 blend of apple cider vinegar and white vinegar. If you are using purely white vinegar, use 1 tsp of sugar as opposed to 3/4.
