Ingredients
- 2 cups of very ripe, previously frozen bananas, approximately 3 goldfinger bananas
- 1 cup water
- 1 cup granulated sugar
Directions

Thaw and mash 2-3 frozen bananas.

Combine water and sugar in small saucepan.

Heat gently until sugar is dissolved, add bananas bring up to brief simmer.

Transfer everything to a glass jar and store in the refrigerator.

After 2 days strain syrup thru fine mesh sieve and return to glass for refrigerated storage.

Cook's Note:
The resulting mixture will be lighter than a 1:1 syrup due to the amount of banana "juice" that is added. You may need to add 50% more of this to a drink recipe to achieve desired sweetness.
